Helpful Tips for Making Granola Cereal Recipe
Oats are one of the few grains (see “No Grain Diet” for info on this subject) that are okay to eat as long as you are not gluten sensitive. If you are, there is a brand that certifies them to be gluten-free, which is Bob’s Red Mill.
You can find these packages at Natural Foods Warehouse or Whole Foods. Otherwise you can order them on-line from www.bobsredmill.com. They are fairly pricey though.
Salba seeds are a wonderful source of Omega-3 fatty acids which Americans especially need since they eat so many Omega-6s in processed foods. We need a balance of no more than 2:1 Omega-3s to Omega-6s. Please see Salba Information for an in-depth discussion of this.
Coconut oil is a fabulous oil for you to consume as the article Good Fat, Bad Fat points out so well. Although it is a saturated fat, it is a medium chain trigyceride and the body does not handle it in the same way as it does other saturated fats. It can even help you to lose weight!
Putting It All Together
The first part of the recipe is just putting everything together into a big bowl. When you get to the second part of the recipe, however, you may need some extra help.
Coconut oil is solid at temperatures under 72 degrees F. From 72 to 76 degrees, it is somewhat creamy in texture. Above 75 degrees is it’s melting point.
So to use coconut oil in the winter time, you have to melt it first. To do so, set the glass jar of oil into a pan of water and turn the heat up until it just starts to simmer. Then turn the heat down and let it sit there until the oil is melted.
To melt the peanut butter, put a Pyrex (glass) measuring cup with one cup of organic Valencia peanut butter into the same pan after the coconut oil has melted and do the same thing.
This acts like a double boiler to keep the peanut butter from scorching. Trust me on this, burned peanut butter is not very appetizing, so be patient.
While you are waiting for the peanut butter to melt (it does help to have the peanut butter at room temperature before you start), put the melted coconut oil in with it. This will help it to work faster. It will take about half an hour.
Add in the Stevia and vanilla and stir until well mixed and completely melted. Then pour it over the dry ingredients, mix it together well and you’re done!
How To Prepare It For Eating
The day before you want to have some of the granola cereal, pour some plain, preferably home-made, yogurt over it (about three heaping tablespoons of it or a small jar of it) and cover it with plastic wrap. Set it in the refrigerator overnight (for 12-24 hours) to get the phytates neutralized before eating it the next day.
It will be somewhat runny at this point. When you take it out to eat it the next day, it will be very thick and you can add some raw milk, coconut milk, Almond milk or Rice milk over it to thin it out. Put in some Stevia or Lo Han sweetener to taste and enjoy a healthy eating treat! Whatever you do, though, do not use sugar! Please see “The Dangers of Sugar” for why. You can also add some fruit of your choice as well, such as strawberries, blueberries, etc.
I eat a bowl of this granola cereal as a “dessert” just about every day. So as soon as I finish a bowl, I wash it out and put more cereal in and add the yogurt to it for the next day. I always wait until I’m just ready to eat it before putting the sweetener in.
If I’m not going to be around the next day, for whatever reason, I don’t set it up. Instead, I wait until I know I will be in and able to eat it. It is a wonderful dessert!

Sweet Breakfast Granola Cereal
(Half recipe) (Full recipe in parentheses)
(Full recipe makes approx. 11 2/3 cup servings
4 (8) cups rolled oats (Bob’s Red Mill has gluten-free oats)
1/2 (1) cup organic flaked coconut
1/4 (1/2) cup Salba seeds or Chia seeds (less expensive)
2 (4) teaspoons Cinnamon
1/2 (1) cup your choice of nuts
1/2 (1) cup of raisins
1. Mix all above ingredients together in a large bowl
2. Heat the following ingredients gently in a 2 cup Pyrex measuring cup set in a saucepan (like a double boiler) over medium heat just until melted and mixed thoroughly (this keeps it from scorching):
1/2 (1) cup peanut butter (Valencia is sweeter)
1/4 (1/2) cup coconut oil
1/2 (1) teaspoon Stevia powder
1 (2) teaspoon(s) vanilla extract
3. Pour the wet mixture over the dry and mix.
4. Store in an airtight container; eat with raw milk or yogurt, soaking it for 12-24 hours ahead of time.
5. You can add your choice of fruit (strawberries, etc.)
This goes quickly so you may want to double the recipe.
