Green Beans Almondine

This recipe for green beans almondine is a crunchy, raw, healthy grab and go version of the classic one. It is easy to make if you buy the pre-washed bags of green beans and then just cut them up into bite-sized pieces.

Buy even if you use beans straight out of the garden, or purchased whole in the produce section of your grocery store, these are wonderful tidbits of bounty in an easily portable mix. Just put the recipe into 16 ounce containers and store them in the refrigerator until you are ready to walk out the door.

Then you can just grab them out of the refrigerator and put them into your Coleman cooler along with a meat and dessert, and there you have it - grab and go goodness!

It would be best to use glass containers, since that is the most inert substance, but that is not always practical. I use leftover containers from buying raw nuts at the pour it yourself stand at Whole Foods, or the peanut butter do it yourself stand.

Just make sure that they are food grade containers. Since you will not be putting hot foods into these, there should not be a problem with BPA leaching out into the food.

Green Beans Almondine

Serves 6-8 (Half recipe in parentheses)

8 (4) cups green beans, cut into bite size pieces (There are 8 cups in a 32 oz. package of pre-washed green beans)

* 1 (1/2) cup almonds, soaked 8 hours and drained (you can buy them pre-sliced)

4 (2) tablespoons Extra Virgin Olive Oil

4 (2) tablespoons lemon juice

2 (1) teaspoon garlic

8 (4) tablespoons onion, chopped

8 (4) tablespoons red bell pepper, chopped

1 (1/2) teaspoon Celtic sea salt

8 (4) teaspoons dried dill or 4 tablespoons fresh (can use parsley instead)

1. Slice the almonds in a food processor if purchased whole.

2. Add to green beans that have been cut into bite size pieces.

3. Mix the olive oil, lemon juice, garlic, onion, red bell pepper, sea salt and dill or parsley together and pour over the beans.

4. Let marinate or serve immediately.

*Indicates something that has to be done ahead of time.
