This homemade Green Goddess salad dressing is good to have on hand for the times when you just want to come into the kitchen and fix a quick salad for lunch or dinner. Salads by themselves can be a complete meal if you add some protein in the form of hard boiled eggs, meat or raw cheese.
If you like, you can substitute olive oil or some other kind of oil for the grape seed oil. It's just nice to have a change of pace sometimes and the grape seed oil has lots of resveratrol, a potent antioxidant that is always good to ingest. Grape seed oil can be found at Kroger in the Nature's Market section or at Natural Foods Warehouse or any Whole Foods store.
The macadamia nuts are what we use in raw foods for "creaminess" or to add body to a recipe. It is also a good source of healthy fats and helps with a feeling of satiety, or feeling full longer.
Green Goddess Dressing
Serves 6
1/2 cup lemon juice
* 1 cup raw macadamia nuts, soaked for 8 hours and drained
3 cloves garlic, chopped fine
1/4 sweet onion
4 stalks of celery
2 teaspoons Celtic sea salt
1 teaspoon freshly ground pepper
1 tablespoon fresh parsley
1 teaspoon fresh thyme
1 cup filtered water
1 Medjool or Deglet date, pitted
1/2 cup Grape Seed oil

1. Place all ingredients, except for the oil, in a blender and blend well.
2. Slowly add the Grape Seed oil to the blender and blend to a creamy consistency.
3. Serve at once.
