Best of the Green Salad Recipes

Green salad recipes are all over the place but most involve cutting up greens and veggies each time, unless you buy everything precut and prewashed. This recipe doesn't replace that, but it does mean that you only do it one time and then have enough good salad to eat on for five days.

You may buy prewashed and cut greens (just be sure they are organic) and/or veggies if you would like to save time. The rest of the fixing is easy!

Here's the recipe for the best and easiest green salad ever!

Marinated Greens

(Half recipe is in parentheses)

1. Choose any type of greens you like, either one type alone or several. I get any three bags of organic greens from Kroger: Spinach, Mixed Baby Greens, Asian Salad Mix, Spring Mix, etc. and put them all into a very large bowl.

2. Add in any other vegetables that you like and chop them small so that they are easy to digest: carrots, zucchini, celery, red pepper, yellow squash, etc. Use organic ones if at all possible.

Mixed nutritional types should use ones in italics.

Dressing for marinated greens:

1 (1/2) tablespoon chopped garlic

¼ (1/8) cup lemon juice

¼ (1/8) cup Braggs Aminos or Nama Shoyu

1/2(1/4) cup organic extra virgin olive oil

1 Tablespoon chopped parsley

3. Put all the dressing ingredients into a measuring cup and stir.

2. Toss the salad with the dressing very well until the liquid completely coats all the greens. Massage it with your hands to help it spread evenly.

3. Put in the refrigerator and let it marinate from 2-24 hours. The longer you let it marinate, the better the flavor.

This will keep in the refrigerator for about 5 days, depending on how fresh the greens are. (Note: It will seem that three bags of greens plus the other vegetables will not fit into the bowl, but this is like a wilted lettuce salad and it will compress greatly as the dressing coats it all.)

Put this into 16 ounce food grade plastic containers and they are Grab and Go ready for your lunches for the week. Just shake them gently when you are ready to eat them so that the oil is evenly spread throughout the greens.
