This healthy chocolate recipe is quick and easy to make and is SO good for you! Children can help make it and they'll have a ball deciding what will go in it.
You will be using coconut oil in this which an extremely healthy fat for you. Please read "Good Fat, Bad Fat" for further clarification on this.
You could use butter instead, but unless it is raw, it will be pasteurized by law. Refer to "Benefits of Raw Milk" for more information on this subject. Because of this, it would be better to use the coconut oil which can be bought at my local Kroger.
The Salba seeds have to be ordered online, so if you just can't wait, you can use ground-up nuts (soak them first) of any kind: almonds, walnuts, macadamia nuts, pine nuts, Brazil nuts, etc. You could also use sunflower seeds which should also be soaked first.
Be sure to only use one of the natural sweeteners, such as Stevia or Luo Han Guo (also called Lohan) and no artificial kinds or any kind of sugar. Stevia is found at Kroger or at Natural Health. Whole Foods or Natural Foods Warehouse. Lohan can be ordered online.
If you like the taste of bitter dark chocolate, just use one teaspoon of the sweetener. However, if you like a sweeter kind of chocolate, use the 1 1/2 teaspoons of it. It takes a lot of sweetener to counteract the bitterness of dark kind of healthy chocolate, so adjust it to your individual taste.
Also use only organic shredded coconut. "Let's Do Organic" is one brand name that can be found at several places. Check out the Resources List for where items can be purchased.
Just please DO NOT buy Bakers Angel Flake coconut from the baking section of grocery stores. You will negate all of the good components of this healthy chocolate recipe by using that.
You just need to use something to give the chocolate some "body" so that it isn't totally liquid. If it's too thick, it will show on the top of the chocolate when you unmold it. If it's too thin, it will just melt that much more easily, but otherwise will not be a problem in this healthy chocolate candy.
You want a little bit of liquid to be on the bottom of the mold, and thus the top of the candy once it is unmolded, to give it a smooth look. One neat thing that you can use for a mold is an ice cube tray from Kroger for $3.00 that has movable bottoms so that you can pop the candy out. Then you have bite sized pieces that are great for snacks or on the go.
All of the items used should ideally be organic and preferably Fair Trade for the cocoa. The coconut oil can be found locally at Kroger or ordered on-line from Mercola.com.
If you take them with you to work or school, just be sure to put them directly on top of the ice pack because they will start to melt at room temperature of 72 degrees F and be totally liquid at 76 degrees.
Healthy Dark Chocolate
6 tablespoons melted organic coconut oil
1 tablespoon dark organic cocoa powder (preferably Fair-Trade)
1 teaspoon organic vanilla
1/2 to 1 teaspoon Stevia powder or Lohan powder to taste
1 tablespoon ground Salba seeds
1 tablespoon shredded coconut if desired (optional)
Individual raisins or nuts, as desired.

1. Melt the coconut oil in its jar set into a pan of simmering water until it melts completely.
2. Put the cocoa powder, sweetener of your choice, and vanilla into a Pyrex glass measuring cup.
3. Pour the melted coconut into it. If it is cold weather, you may need to set the measuring cup into the hot water to keep the oil from solidifying too quickly.
4. Stir the mixture until it is smooth.
5. Stir in the Salba seeds, and if using, the shredded coconut.
6. Once well mixed, pour into your mold of choice. (Ice cube tray, soap making mold, silicon bakery mold, etc.)
7. Let set slightly, then add raisins or nuts gently so that they don’t go to the bottom, which will be the top once unmolded.
8. Put the molds into the refrigerator until firm, about 10-15 minutes.
9. Pop them out of the molds and enjoy! Store the uneaten ones in the refrigerator until ready to indulge again.
