Healthy Muffin Recipe With Salmon Sausage

This healthy muffin recipe with salmon sausage and other bread and muffin recipes I list, use coconut flour, which can only be purchased from Dr. Mercola's website, and coconut oil which can be found locally or on Dr. Mercola's website.

Since there is no gluten in coconut flour, we have to use eggs to hold them together. If for whatever reason you cannot eat eggs, you can substitutes EnerG brand's egg replacer instead. That product can be found at my local Kroger store or at Natural Foods Warehouse or Whole Foods.

Salmon Sausage Muffins

Makes 6 muffins

1 Vital Choice Italian Salmon Sausage patty

3 eggs

* 2 tablespoons coconut oil or butter, melted

1/2 teaspoon salt

1/4 teaspoon onion powder

3 tablespoons sifted coconut flour

1/4 teaspoon baking powder

1/4 cup sharp cheddar cheese, grated

1. Preheat the oven to 400 degrees F.

2. Lightly cook the sausage in coconut oil in a frying pan, just enough to get it to come apart easily and thaw it out.

3. Cut the sausage up into small pieces and set aside.

4. Blend together eggs, oil, salt and onion powder.

5. Combine the coconut flour and baking powder and sift it into the batter.

6. Stir the batter until there are no lumps.

7. Fold in the sausage and most of the cheese, reserving a bit for the tops of the muffins.

8. Spoon the batter into lined or greased muffin cups.

9. Sprinkle the rest of the cheese on top of the muffins.

10. Bake at 400 degrees F for 15 minutes.
