Salmon Salad Recipe

This salmon salad recipe is healthy for you in many ways. The Vital Choice brand salmon is wild-caught off the coast of Alaska and is third-party certified as mercury-free as possible. Go to the Safe Fish page to order it.

The mayonnaise used is Vegenaise brand GRAPESEED oil. Don't buy any other kind of oil based mayonnaise from this brand - they do sell several other kinds. The cap and label on the grapeseed brand are both purple.

Grapeseed oil is chock-full of anti-oxidants from the resveratrol that is found in grape seeds and skins. It is egg free, dairy free and preservative free and can be found at Whole Foods and Natural Foods Warehouse.

This is a recipe for two days worth of salad so put the second serving in a lidded container to take with you on the road to work or school or to eat the next day at home. You'll be glad you did.

Healthy Salmon Salad

1 7.5 ounce can Vital Choice Wild Red Alaskan sockeye salmon

2 tablespoons Vegenaise brand mayonnaise

1 Individual Serving of Catsup (see recipe below) Regular catsup has way too much sugar and other bad stuff in it.

1 teaspoon organic horseradish sauce (optional)

1 tablespoon of chopped onion

1. Open can of salmon and put it all, including oil, in a small bowl.

2. Add the mayonnaise to taste (you may prefer a little more or less).

3. Mix in the Individual Serving of catsup (double it if preferred).

4. Add the horseradish sauce to taste as well.

5. Stir in the chopped onion.

6. Mix well and serve over lettuce leaves or eat as is. Be sure to eat the lettuce leaves as well!

Individual Serving of Catsup

1 tablespoon organic tomato puree or tomato paste

3/4 teaspoon apple cider vinegar

Pinch of Stevia, to taste

1/4 teaspoon garlic, finely minced

1/4 teaspoon minced basil

Whisk all ingredients together in a small bowl and use as needed. Double or triple the amount according to how much catsup your recipe calls for. Try to make only the amount you can use up at that time. This is a sugar-free recipe that you can make up in small amounts since there are no preservatives in it.
