Sweet Potato Salad

This sweet potato salad recipe is really easy to make, in part because it is raw and therefore no cooking is required. All you do is cut up the potato and add the other ingredients, and presto! You have a healthy and portable salad to take with you to work, school or on errands.

You could even take it with you on a picnic. With some cold ham and a green salad, it would be great by a river, on the sea shore or on a mountain trail. The possibilities are endless!

Sweet Potato Raw Salad

Makes 4 servings

1 large sweet potato, peeled

* 1/2 cup raisins, soaked 1-2 hours

* 1/4 cup walnuts, soaked 8 hours and chopped into bite size pieces

1 tablespoon raisin juice (from soaking water)

1/2 teaspoon cinnamon or to taste

1. Chop the sweet potatoes into medium sized pieces in a food processor.

2. Take the potatoes out and put them into a serving dish.

3. Drain the raisins.

4. Add the raisins to the sweet potatoes.

5. Chop the walnuts into bite sized pieces either manually or in the processor.

6. Sprinkle the raisin juice over the mixture.

7. Sprinkle the cinnamon over the mixture.

8. Toss well and serve.

Put this into four 16 ounce food-grade containers for Grab and Go lunches.

Glass or ceramic is preferable but plastic can be used since this is not heated.
